Kingsmeade Tinui Blue has come to be our 'signature sheep cheese' and has won numerous awards over the years. It has a delicate yet intense balance of sweet and salty flavours which pair perfectly with a rich dessert wine. The green/blue mould contrasts beautifully with the pale sheep's (pasteurized) milk, making the Tinui a beautiful addition to any cheese platter. It is a firm yet spreadable cheese, perfect with plain crackers and ripe pear slices. When it gets very old, which some people love, it will blow your socks off, so very mild in the early season and pretty stinky a year later.... When filming with the Topp Twins, we had to prepare a simple dish for them to eat, so it was large mushrooms covered with butter and Tinui blue cheese. In the oven until the mushrooms were cooked and served with salad. They ate it all, with some red wine and said they liked nothing more than "fungus and mould" , how charming is that? Try it.
Please Note: Due to the popularity of this cheese, and the seasonal nature of our sheep milk supply (they need a rest over winter), the Tinui Blue may not be available all year round.
