Made to a Spanish Manchego recipe our Opaki Manchego is hard, rinded  pasteurized sheep milk cheese with a supple inside.  Kingsmeade  Manchego is aged for a year to give it good depth of flavour and is very suitable for grating on to the likes of  soups and Lasagnia.   We use only vegetarian rennet   Try on tapas or toss across a simple pizza, or indulge with a red wine and heaps of Manchego on crusty bread.
