Our Cumin Gouda is made similar to a traditional Dutch style, but made with pasteurized sheep milk. It is Creamy with a smooth texture and a delicious, not too overpowering cumin flavour. As it ages it becomes quite "Nutty" By keeping the cumin light, the traditional sweetness of the sheep milk remains in the cheese. We use vegetable rennet. This is always a great gift for your Dutch friends and it goes well with cinnamon or mint and is great on top of soup for an interesting flavour. This cheese freezes well.
